Chicken Wing Stick
Wing stick refers to the drumette, the meatier end of the wing shaped like a small drumstick, with a single bone that makes it easy to eat by hand. It has more meat per piece than the flat mid joint, so it holds up well to a longer marinade or a wet sauce like buffalo or salted egg. The shape makes it a common pick for party trays and bar snacks, since one bone means one clean bite. Cook it the same way as a small drumstick: high heat first to crisp the skin, then finish through so the meat near the bone is no longer pink.
