Beef Leg

Beef leg is a working muscle, lean and firmer than rib or loin cuts, so it takes well to thin slicing or mincing rather than a quick pan-sear. Sliced thin, it goes into stir-fries, beef noodle soup, and hotpot, where a short cooking time keeps it tender. Minced, it’s a lower-fat option for meatballs, dumplings, or a bolognese-style sauce. Because it has less marbling than rib cuts, a marinade with a bit of acid, like lime or vinegar, helps tenderize it before cooking.
