Lemongrass Grilled Chicken Drumsticks for Your Next BBQ

Blend lemongrass, turmeric, garlic and fish sauce into a paste, give the drumsticks four hours, then finish on the grill, in the oven or in the air fryer.

The marinade that makes BBQ drumsticks worth fighting over is a blended paste of lemongrass, turmeric, garlic, shallots, fish sauce and sugar. Give it four hours on scored drumsticks, overnight if you can, and it works on any heat you own: charcoal, oven or air fryer. One recipe, three finishes, so the same batch covers the barbecue pit and the Tuesday you cannot be bothered to light one.

The usual problem. BBQ drumsticks come off the pit black outside and pink at the bone. The sugar in a good marinade chars fast, the drumstick is thick near the bone, and half the time the meat went on with a frozen core. All three have simple fixes, and none of them is a new recipe.

The marinade that covers all three

Everything goes in a blender, so this takes five minutes. For eight drumsticks, about 1.2kg:

  • 3 stalks lemongrass, white parts only, roughly chopped
  • 3 shallots and 4 garlic cloves
  • 1 teaspoon ground turmeric
  • 1 tablespoon fish sauce
  • 1.5 tablespoons sugar, half a teaspoon of white pepper, a pinch of salt
  • 2 tablespoons oil to bring the paste together

Score each drumstick with two or three slashes down to the bone. The cuts let the paste reach the meat and let heat reach the thick part, which is most of the fight against the pink-at-the-bone problem. Massage the paste in, then marinate in the fridge for at least four hours. Overnight is better, and the turmeric stains everything it touches, so use a bowl you do not love and maybe gloves.

The paste scales, so make double. Use half now and freeze the other half flat in a zip bag. Next barbecue, thaw the bag in the chiller and it is ready the moment the chicken is.

Thaw before the fire

Frozen drumsticks move to the chiller the night before marinating. On barbecue day itself, the rescue is a sealed bag submerged in ice water with the water changed often, never the counter: SFA warns against room-temperature thawing outright, and names the ice-water method as the fast alternative.1

This matters more on a grill than anywhere else. A partially frozen drumstick is the exact recipe for a cooked outside and a raw inside.2 Feel along the bone before the meat goes anywhere near the marinade: any hardness means more thawing time.

On the grill

Cook over medium coals that have ashed over, not over flames. The sugar and shallots in the paste are what build that lacquered, slightly charred crust, but they burn if the heat is angry. Turn the drumsticks every few minutes so no side sits too long, and if they darken too fast, slide them to the cooler edge of the grill to finish. Save the hard char for the last two minutes over the hot zone, when the inside is already done.

Flare-ups happen when marinade drips onto the coals. Do not chase the flames with water. Move the drumsticks off the hot zone, let the fire settle, then bring them back. A foil sheet under the meat solves it for the whole session.

In the oven

Line a tray, space the drumsticks out, and roast at 200°C for 35 to 40 minutes, turning once at the halfway mark. For the char the coals would have given you, switch to the top grill element for the final three minutes and watch it like a hawk. The line between caramelised and burnt is about sixty seconds.

In the air fryer

180°C for 20 to 25 minutes, turning at halftime. Keep the drumsticks in a single layer with air space around each one, in two batches if the basket is small. Crowded pieces steam each other and you lose the crust that makes this recipe worth the marinating time. Give the basket a shake when you turn them, so the paste that falls off does not scorch underneath.

How to know they are done

Pierce the thickest part, right next to the bone. The juices should run clear and the meat should show no pink when you pull the cut open. If in doubt, give it five more minutes on gentler heat: a drumstick forgives extra time far better than a breast does. Then pile them up with lime wedges and sliced cucumber, and watch them disappear.

A dipping sauce is easy if you want one: fish sauce, lime juice, sugar and sliced chilli, stirred until the sugar dissolves. It is the same flavour family as the marinade, so it sharpens the drumsticks instead of competing with them.

One marinade, any fire

Drumsticks take the lemongrass paste and forgive the flames. Stock the freezer before the next barbecue.
